Pinoy Desserts That Are Better With Cheese

Cheesey ube ice cream? Yes, please

 

 

If there’s anything that’s helped us cope with the curveball that is 2020, it’s food. And while sushi bake might have hit the spot for some, it’s really home-cooked Pinoy food that ultimately brings us comfort. It reminds us of our loved ones, of home and better days, especially when we’re talking about Pinoy desserts! 

 

Of all the desserts on the Filipino menu, halo-halo, ube ice cream and bibingka are usually top of mind. What do they all have in common? They all taste even better with a generous serving of cheese—topped, grated, baked in, melted or served on the side. Not sure how? Our friends at Eden Cheese share recipes to up those desserts:

Special Halo-halo with Eden 

Ingredients:

Saging na Saba (Plantain Banana)  Shaved Ice
Chopped Brown Sugar Pinipig
Evaporated Milk Kaong (Sugar Palm)
Sago (Tapioca Pearls) Nata de Coco (Coconut Jelly)
Sweet Red Beans Ube (Water Yam)
Small Slices of Langka (Jackfruit) Leche Flan
Colored Jelly Eden Cheese, grated
Cubed Macapuno (Coconut Sport)

 

Directions:

  1. Place the following ingredients in a glass: saba, sago, munggo (mung bean), langka, jelly, macapuno, pinipig, kaong and nata de coco
  2. Add brown sugar and then shaved ice until the glass is full. (Pro-tip, you can freeze the evaporated milk and shave that instead of plain ice!) Drizzle with evaporated milk and garnish with ube and leche flan
  3. Top if off with grated cheese. Mix and enjoy!

Ube Ice Cream Pandesal with Eden

Ingredients:

2 Scoops of Ube Ice Cream
1 Pandesal
Eden Cheese, grated

 

Directions: 

  1. Slice pandesal in half
  2. Bring out ube ice cream and let it sit in room temperature for five minutes
  3. Place one or two scoops of ice cream on the bottom half of the pandesal
  4. Add grated cheese before covering with the top half. Best enjoyed for merienda on a hot afternoon!

 

Pinoy Desserts That Are Better With Cheese

Cheesy Bibingka with Eden

Ingredients:

1 Cup Rice Flour 75g Eden Cheese, grated
2 Cups of All-purpose flour 2 Salted Eggs, sliced
2 tsps of Baking Powder
2 Cups of Water
2 Eggs, beaten
2 Cups of Sugar
2 Cups of Coconut Cream at Room Temperature
2 Tsps of Melted Butter

 

Directions:

  1. Preheat the oven to 350°F (177°C)
  2. Line all three round baking pans with wax paper or banana leaf. Set aside
  3. Mix rice flour, all-purpose flour and baking powder in a bowl
  4. In another bowl, combine water, eggs, sugar, coconut cream and butter. Mix well!
  5. Slowly pour dry ingredients over wet ingredients. Mix with a rubber spatula until you get a smooth consistency. Use a sieve to get rid of lumps
  6. Fill round baking pans with the mixture until 75% full. Top with sliced cheese and salted egg
  7. Bake in the oven for 20 to 25 minutes. To make sure it’s cooked through, stick a toothpick at the center and check if it comes out clean. Serve hot and enjoy!
